520 _a At the request of CARICOM, the Industrial Development Unit (IDU) undertook investigations relating to production of sausages, cured meat preparations, sausage casing and the use of local spices in such preparations in ten Caribbean countries. IDU took into account market size, existing industry, level of imputs and livestock development. Existing units in Barbados, Jamaica and Trinidad and Tobago are to be upgraded. Local processing units are small and therefore crucial to domestic economies. Suggests livestock development on a long term basis for CARICOM countries presently dependent predominantly on imports. Production of casing not viable due to unavailability of materials. Concludes that the meat processing units need upgrading and modernization. Livestock development is of outmost priority for promoting a foundation to meat processing industry, and the market size of CARICOM does not warrant the setting up of synthetic casing manufacturing facility.
